KALE AND SWEET POTATO GRATIN
Kale and Sweet Potato Gratin

Ingredients
5 tablespoons buttermilk
3 garlic
salt and pepper to taste
1 bunch kale washed, stemmed and roughly chopped
3 large sweet potatoes peeled, sliced 1/8 inch thick
2 cups half-and-half
2 teaspoons cinnamon
nutmeg freshly grated
1 cup cheddar cheese white, freshly grated
Instructions
Preheat oven to 400 degrees. Grease an 8x8 baking dish with 1 tablespoon of butter.
Smash garlic with the side of a knife and sprinkle generously with salt. Chop and scrape the garlic into a paste.
Combine garlic paste, kale, potatoes, half-and-half, cinnamon, and remaining 4 tablespoons of butter (cut into ½ inch pieces) in a pot.
Season generously with salt and pepper, and fresh nutmeg. Bring to a boil over medium high heat, stirring occasionally with a wooden spoon.
Cook until potatoes are slightly tender and their starch has thickened the liquid, about 10 minutes.
Transfer the mix to the prepared baking dish; smooth the top as much as possible. Cover the gratin with cheddar and bake until deep golden brown, 20-30 minutes.
Let cool and set a little before serving.
