Kale and Sweet Potato Gratin

  1. Preheat oven to 400 degrees. Grease an 8x8 baking dish with 1 tablespoon of butter.

  2. Smash garlic with the side of a knife and sprinkle generously with salt. Chop and scrape the garlic into a paste.

  3. Combine garlic paste, kale, potatoes, half-and-half, cinnamon, and remaining 4 tablespoons of butter (cut into ½ inch pieces) in a pot.

  4. Season generously with salt and pepper, and fresh nutmeg. Bring to a boil over medium high heat, stirring occasionally with a wooden spoon.

  5. Cook until potatoes are slightly tender and their starch has thickened the liquid, about 10 minutes.

  6. Transfer the mix to the prepared baking dish; smooth the top as much as possible. Cover the gratin with cheddar and bake until deep golden brown, 20-30 minutes.

  7. Let cool and set a little before serving.
