  1. In a small bowl, combine ingredients for dressing: mayonnaise, parsley, lemon juice, capers, mustard, tarragon, and salt and pepper to taste.

  2. Mix until well combined. Toss with celery root.

  3. Nutritional value: Celeriac is high in fiber and a good source of vitamins B6, C and K. It also contains important minerals, such as phosphorus, potassium and manganese.
