DRUNKEN GRILLED CHEESE
Drunken Grilled Cheese

Ingredients
1 tablespoon Olive Oil
1 small onions thinly sliced
salt and pepper to taste
1/4 cup lager or other beer
4 slices bread
2/3 cup cheddar cheese shredded
1 tablespoon Butter
Instructions
Heat olive oil in a skillet over medium-low heat. Add onion and cook for ten minutes, until softened and turning golden brown, stirring frequently.
Add lager, salt and pepper and increase heat. Cook for 5 more minutes, until liquid is absorbed.
Remove from heat. Butter bread on each side.
Divide onions onto two slices of bread and top with cheese and remaining bread slices.
Wipe out skillet and return to medium-high heat. Place sandwiches in skillet and cook until browned, about 3-5 minutes on each side (depending on how toasted you like your grilled cheese).
