Sweet Potato Latkes

Ingredients
1 sweet potatoes small
1 russet potato medium
1 onion
2 tablespoons flour
1 egg
1 teaspoon baking powder
1/4 cup oil plain
salt and pepper to taste
Instructions
Peel potatoes and onion. Grate using the largest hole of a cheese grater or food processor. Pour into a colander and squeeze out as much liquid as you can. (The trick to crispy latkes is to squeeze out as much liquid as you can.)
Mix potatoes and onion with flour, egg, salt, pepper and baking powder.
Heat a large skillet over medium-high heat and add about 2 tablespoons oil. Spoon about 2 tablespoons of batter per latke.
Cook for about 5 minutes or until brown, flip and cook the other side. Drain on paper towel.
Repeat until all batter is used.
