Lemon Couscous Salad with Spinach

Ingredients
2 1/4 cups water
10 ounces couscous
1/2 teaspoon salt
5-6 tablespoons fresh lemon juice or to taste
1/4 cup Olive Oil
1 bunch spinach small, washed and finely shredded
3 Scallions thinly sliced
3 tablespoons fresh dill finely chopped
Instructions
In a saucepan, bring water to a boil and stir in couscous and salt. Remove pan from heat and let couscous stand, covered for 5 minutes. Fluff couscous with a fork and transfer to a bowl.
In a bowl, combine lemon juice, oil, salt and pepper. Pour over couscous and cool completely.
Stir in spinach, scallions, and dill and chill salad, covered for at least two hours.
