Refreshing Rhubarb Lemonade

Beat the summer heat with this Refreshing Rhubarb Lemonade!

Ingredients:

- 4 cups chopped rhubarb

- 1 cup granulated sugar

- 4 cups water

- 1 cup freshly squeezed lemon juice (about 6-8 lemons)

- Ice cubes, for serving

- Lemon slices and fresh mint leaves, for garnish (optional)

Directions:

1. In a large saucepan, combine the chopped rhubarb, granulated sugar, and water.

2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let simmer for 15-20 minutes, or until the rhubarb is very soft.

3. Remove the saucepan from the heat and let the rhubarb mixture cool to room temperature.

4. Once cooled, strain the mixture through a fine-mesh sieve into a large pitcher, pressing down on the solids to extract as much liquid as possible.

5. Discard the solids and stir in the freshly squeezed lemon juice.

6. Place the pitcher in the refrigerator to chill for at least 1-2 hours, or until cold.

7. To serve, fill glasses with ice cubes and pour the chilled rhubarb lemonade over the ice.

8. Garnish each glass with a slice of lemon and a sprig of fresh mint, if desired.

9. Stir well before serving and enjoy!
