Heirloom Tomato Salad

SERVES: 4

TOTAL TIME: 10 minutes

*All ingredients currently available at the Cooperstown Farmers' Market.

Ingredients

·    1 pound heirloom tomatoes, sliced into 1/2-inch wedges*

·    1 cup colored grape tomatoes, halved*

·    sea salt, or kosher salt, to taste

·    fresh ground black pepper, to taste

·    1/2 cup thinly sliced red onions

·    1 tablespoon extra virgin olive oil

·    2 teaspoon balsamic vinegar

·    1 clove garlic, minced*

·    ⅓ cup crumbled feta cheese*

·    2 tablespoons chopped fresh basil*

·    1 tablespoon chopped fresh parsley*

Instructions

1.  Arrange tomatoes in a salad bowl and sprinkle with salt, and pepper.

2.  Add onions over the tomatoes.

3.  In a small mixing bowl combine olive oil, balsamic vinegar, and garlic; drizzle over salad and gently toss to combine.

4.  Taste for salt and/or vinegar; adjust to taste.

5.  Top the salad with crumbled feta.

6.  Garnish with chopped basil and parsley. Serve and enjoy!
